Hello everyone! I hope everyone is having a great week. Mine has been busy but productive. I will be completing my last graduate class that I need to receive my teaching license on Thursday, so my final project has been taking up all of my time. Only one student teaching left and I’m done with school. Can I get an amen!?
Since the holidays my sweet tooth ( or teeth, I swear I was blessed with more than one) has been out of control lately. Give me all the chocolate, fro yo and desserts. So, I decided what better than to make a guilt free paleo treat for my sugar cravings.
I whipped out my current favorite cookbook, The Paleo Kitchen and chose the Lemon Raspberry Swirl Muffins!
Lemon Raspberry Swirl Muffins
1/2 cup coconut flour sifted
1/2 cup coconut sugar
5 large eggs, whisked
juice of 2 lemons
zest of 1 lemon
1 teaspoon vanilla extract
1 teaspoon baking soda
pinch of fine grain sea salt
1 cup raspberries
2 tablespoons organic honey
1. Pre heat the oven to 350 degrees, and line 9 wells of muffin tin with paper liners
2. In a large bowl, mix together the coconut flour, coconut sugar, eggs, lemon juice, zest, vanilla, baking soda and salt until smooth. Pour batter into the lined wells of muffin tins.
3. In a blender, puree the raspberries and honey until smooth. Use a spoon and add about a tablespoon of the raspberry puree on top of each muffin, then use a knife to swirl the raspberry through the batter.
4. Bake for 25-30 minutes, or until toothpick comes out clean. Let cool in the muffin tin on a cooling rack.
Store in an airtight container for 5-7 days!
This was my first time “sifting” and “Zesting”- I felt so fancy 🙂
The recipe was very easy to follow, quick and minimal ingredients (which is always a plus for me). My mom taste tested them as well and gave them a thumbs up!
I had one this morning for breakfast and it was delicious. I would recommend these muffins. Let me know if you try then out!
