Happy Wednesday everyone! Is it just me or does it feel like this week is FLYING by!! Well, if not the bright side is that it’s almost the weekend!!!
I have decided to take a shot at my very first WIAW! I am an excited newbie!! Thank you to Jen at Peas and Crayons for hosting!!!
Since starting paleo a few weeks ago I have had a new obsession with eggs..eggs.. and more eggs! Let’s just say I have gotten quite creative with my egg dishes. I have had everything from scrambles, over easy, and poached, and I am loving it!!
Egg scramble with avocado and plantains! Egg scramble with AF turkey breast, of course avocado!
For lunches this summer I have been loving a huge salad! Not those side baby salads..a salad so large it barely fits in tupperware!! This girl has gotta eat!! I love volume foods and salads are by far my favorite! They are so versatile and you can add so many different ingredients to completely change the flavors.
Loaded salad..chicken,cucumbers, avocado,apples….
Last night I had dinner at Seasons 52 with my mom and I had this amazing dish! Cedar Plank Salmon with Yukon Gold Potatoes and a side of carrots, turnips and asparagus! Meal perfection!
As far as dinners and snacks go.. my new go to post workout smoothies has been the Plant Fusion Vanilla!! Thank you to Brittany Freckled Nettles for the great recommendation. Each day I have been adding different fruits: strawberries, blueberries or bananas! This protein is plant based, without dairy, whey or any of the other artificial ingredients that are in most proteins! Lets just say my stomach thanks me from switching from those proteins!

Where to begin? First, I am jealous of your meal at Seasons 52! I’ve been there once and have always wanted to go back. Giving me ideas for my birthday coming up in October…;) I am all about REAL volume when it comes to veggies and you are doing it right my friend. I’ve never poached an egg before, so once we establish were both normal, healthy, sane ladies, let’s schedule a cooking date/movie night. Then run part of lakeshore in the morning. Deal? Deal.
